During the Medieval Times, thyme leaves have been used as a gift to empower courage in those who carried the leaves. Today, the leaves are used as an herb in many culinary dishes, giving roasted meats, vegetables and even apples a delicious flavour. Thyme is also used for medicinal oils and is a remedy for sore throats and coughs. During early to mid-summer, small lightly coloured flowers grow in clusters around the tips of the branches enchanting the herb with the lovely scent of a new beginning.
